REFINEMENT OF WHEAT WITH FERMENTED CARROTS
After washing, the grain is sprouted in a carrot fermentation. Similar to the sourdough principle, this modulates wheat starch.
Starch, which is broken down into glucose in the small intestine, is released more slowly.
The result is a moderate rise in blood glucose combined with a lower insulin response, so that the product has a low glycemic index (Glyx).
Modulated starch also contributes to the formation of short-chain fatty acids in the large intestine, which in turn provide insulin-independent energy.
Carrot fermented topping also improves the texture of cereal flakes and increases the palatability of C'Real Basics products.
The result is a delicious cereal flake with glyx factor!
